25ml fresh lemon juice
1 egg white

MFH says

This is a boozy Gentleman’s cocktail that pre-dates the prohibiton era. Berry flavours compliment the botanicals of the gin and a little egg white gives a smooth and very drinkable mouth-feel! Man For Himself has enjoyed this cocktail in bars all over the world. 

Clover Club – How To

  1. Add all ingredients to cocktail shaker.
  2. Dry shake (without ice) to emulsify egg.
  3. Add ice to shaker and shake again.
  4. Double strain into a chilled martini glass or coupette.
  5. Garnish with a fresh raspberry (MFH likes three!)

 

How To Make Your Own Raspberry Syrup

1 part water

1 part raspberries

2 parts sugar

Muddle the raspberries and sugar, gradually add warm water (never boil) and stir until sugar has dissolved. Fine strain to remove any seeds.

 

FACT

The Clover Club is so beloved there is even a cocktail bar in Brooklyn, New York named after it.

Don’t despair if it’s not perfect on your first attempt. It’s a good excuse to ‘practice’!
